Banana Bread

Banana Bread has long been one of my favorite types of "loaf"... its moist interior, and chewy exterior. Unfortunately I have had my fair share of troubles getting my hand on really good banana bread in NYC. It is one of the things that I have missed most from my Australia days (...referring to you SPEEDOS!) I have thankfully/finally tweaked together a recipe that resembles the closest possible thing to what I recall and it certainly makes my taste buds happy. Give this super simple recipe a try and let me know what you think :) 

Ingredients...

5 ripe bananas
6 tbsp butter (melted)
4 dates (pitted) *optional
1 tsp baking soda
1/4 cup sugar
1/4 tsp salt
1 tsp vanilla extract
1 egg
1 1/2 cup flour

Directions...

1. Preheat oven to 360°F

2. Thoroughly mash bananas in a large bowl.

3. Add butter, dates, baking soda, sugar, salt, vanilla extract, egg & flour to the bowl. Continually mix as you gradually add in the ingredients.

4. Once combined pour into a loaf or muffin tin(s). (I usually use an 8 x 4) Bake for about 1 hr (check at 50 mins) *muffins will cook quicker.
